What specific paint brands and color names/numbers do you folks use for the following?

Union dark blue

Confederate gray

Confederate butternut

Union/Confederate sky blue
 
I use Vellajo Oxford blue for Union which i find matches perfect with Metals like Conte and Britains,
And Grey Blue for Union pants.........Rebs Are a mix bag of paints.
 
Back then, butternut varied drastically in shade and actual color since there were no standards for it. I've used Testors light brown in the past.

For the Union enlisted man's Great Coat (winter dress) is Grey Blue the appropriate color? In looking at Britains it appears to be the same color as the pants. I am going to paint some union figures wearing their winter great coats, and I want to use the correct shade. The Officers great coats appear to be Oxford Blue with a grey blue inner lining.
 
If you are going for realistic colors anything and everything works. Why you might ask? Well you might. So the reality with uniforms on both sides is that the contractors who supplied the uniforms generally speaking were pretty cheap when it came to quality. Dyes ran when wet. They faded really fast and fell apart at an alarming rate. For the Confederacy there was little standardization. Dye was scarce and rarely available in large amounts. Colors of grey varied to such a degree as to be laughable.

That said For the Confederacy Try yellow grey, green grey, even brown grey. Using various shading and highlighting will get you an astonishing variety of colors. Actually it is quite fun to do so. For inspiration check out Keith Rocco's work. Fabulous paintings with impeccable research.
