My top ten (no particular order);

Fighter Squadron - a 1949 classic
Battle of Britain - so many great planes!
12 O'Clock High - not much flying but a classic
The War Lover - Steve McQueen and B17s!
Memphis Belle - silly history but lots of good B17 stuff and exciting
Flight of the Intruder - just fun to watch
The Blue Max
30 seconds Over Tokyo (their Hornet launch scenes were FAR better than the multi-million dollar POS "Pearl Harbor")
633 Squadron
Air Force - 1943 - pure propoganda but a fun movie!
Tora-Tora-Tora - lots of planes and action

Also rans - Memphis Belle (the documentary), Tuskeegee Airmen, Strategic Air Command, Top Gun (great flight scenes)

For me the best 5 were Battle of Britain, Midway, Memphis Belle and the Dam Busters and the Blue Max
