I see there is the new April 2017 T Gunn releases on Treefrog, see below,

I collect the Spartans, but my knowledge on them is quite small, I think they do look great, but will collect the figures with the traditional shield, but does anyone know the reasoning behind the two different shields, such as the traditional shields and the 'Griffin' shields. Why did the two different types of shield exist? Is it a historical thing? Where they used at two different eras? Or was one for fighting and the other for ceremonial? I would be interested to know?

Two Romans this month, will collect and add to my Century.

We don't know for sure, but the prevailing evidence and theories say this:

During the Greco-Persian and Peloponnesian Wars hoplites for most city states would have been the aristocracy and would have used their own family or clan devices.

Some time after the Peloponnesian Wars we start seeing a few references to three things: Spartans having similar devices on shields and other equipment and a shift from city state focus to regional focus (Lacedaemian) and lastly a shift to levies led by aristocrats.

This all is logical and has repeated itself a few times throughout history. Still, it is based on "found" evidence and not conclusive evidence (I.e., we find more Corinthian helmets during Greco-Persian War so that must have been the most popular style. )

Uniformity is a modern thing and did not really exist in antiquities. When there is war, you show up with whatever lies around. If you did not invest, then you show up in your Dad's armor.
