Hi all, with the crazy year we have had with Covid-19, Delta yada, yada...did anyone get a chance to take vacation? Where did ya go??...I've had family come to Arizona so used my time here to do local Arizona travels..Sedona, Flagstaff, Grand Canyon, the local Haunts here in Tucson such as Mount Lemmon, Sauharo National Park, ...hoping next year to get a visit back East to Virginia, Maryland, OBX.

I have a butcher question...

how come my local stores Randalls and Krogers (Texas) don't sell top sirloin steaks anymore...
while they used to always offer them 3 years ago...packing the counter with them...
you hardly ever see them anymore...
it seems like when Covid started...they disappeared from the shelves...
is this cut becoming unpopular?
I know it's not the best cut in the world...lack of marbling...
but to me...it is one of the most versatile cuts for a lean meat...
shish ka bob...grilled steak...beef tips...pepper steak over rice...stroganoff...stew...etc...just to name a few...

you're the meat expert...

It's regional buyer's issues...being different regions of the Country are having different problems with certain primals, in my company Safeway in Arizona we are having tough time buying Tenderloins, certain Pork products...due to crazy price increases with suppliers also Covid-19 has caused some production issues, so swing over to Tucson and I'll cut ya the best Sirloin you ever had!!!!

thanks for the quick reply and educated answer...yea...maybe that's what is happening here...2 years ago...they would always be on sale for $1.99-$2.49...super cheap...and trimmed out...they are a very versatile lean cut...

the only fat I will eat on a steak is from the rib-eye because it is so flavorable...and maybe what tiny bit there is on a beef tender...but I do trim the silver off the tender...other than that I even trim off most of the fat from my Porterhouse...T-bones and NY Strips...

Mike, fat is flavor. Put salt on it. Yum, yum. Especially, that big piece of fat in the prime rib that melts in your mouth. Where's John from Texas to back me up? I like top sirloin too. Leaner, but has good beef flavor.
Sam, took my daughter to college in Fort Collins, Colorado during summer. Saw some big bull elk on the side of the road at Estes Park, beautiful place. Car rental was over a $150 per day. Yikes.

Estes Park is absolutely beautiful!! Been there a few times!! Love the Stanley Hotel!!! As far as the car rental that's insane!!!
