I was wondering if anyone knew of a good "coffee table" (plenty of photos and diagrams) book dealing with Northern Ireland.

I have just recently read :
Making sense of the troubles: The story of conflict in NI by David McKittrick its 368 pages hard cover and a good read not hundereds of pics but, you can search for large books which have pictoral images of the conflict. They are out but have no further details. Check Worldwartwobooks.com they have some good ones

Well these are not coffee table books, but are up excellent reads:

Bandit country "The IRA and South Armagh" by Toby Harden, its slightly of date 11years old, but its an excellent read and fair zips along.

The Provos: The IRA and Sinn Fein by Peter Tayor,An excellent history of the modern IRA,most of Peter Taylors books seem to have decent reviews.
Hope this helps?
Regards Steve.
