My apologies for the delay in replying – I’ve only just noticed this thread.
It’s brilliant to hear that you’ll be visiting Dublin; I’m only sorry that I’ll be leaving for the London Show the day before you arrive. It would have been an absolute pleasure to meet with you otherwise.
Unfortunately, Trooper Bernard has it spot on about toy soldier shopping in Dublin: I’ve yet to come across an outlet here that stocks any of the major modern manufacturers. There are one or two hobby shops in and around the city centre that carry 1:6 figures as well as Dragon-type 1:35 kits and figures, but for product from companies like K&C or Britains I’m afraid you’ll be drawing a blank.
That said, I don’t think you’ll be short of things to occupy you over a weekend here.
In terms of military history, without a doubt one of the best places to while away some time in is the
Soldiers and Chiefs exhibition in the National Museum at Collins Barracks, which is on the quays, just a short walk from the city centre:

Although I’m a touch biased, as I’m a very recent recruit to a group called the Military Heritage of Ireland Trust, which has a significant role in facilitating the exhibition, it really is worth a look at some point over your stay.
The exhibition examines the history of the Irish soldier since the 16th century, moving from service with the British Empire, to the post-independence activities of the Irish Defence Forces, and all points in between. Beyond the exhibition itself, the National Museum site at Collins Barracks as a whole is extremely interesting.
If you’d like to indulge your less cerebral side, than a trip to the Guinness Storehouse is warmly recommended! Also within fairly easy reach of the city centre, it’s an excellent place to enjoy yourself:

Although it’s some time since I was last there, I seem to remember that the admission price basically gets you a guided tour around the former brewery - with more than one opportunity to sample the black stuff thrown in - culminating in a final pint in their Gravity Bar.
