On your side of the Atlantic, did you ever see Tour of Duty released. It was a series about an Army platoon in Vietnam. The opening credits song was Paint it Black by the Stones. The producers used a lot of great rock music from the '60s. For licensing reasons, the music was changed for the DVD release.
 
Tour of duty was a good series and yes the music paint it black was great. Its still on now on one of those dodgy sky channels during the night

Anything composed by John Williams, but especially the themes he composed for "Star Wars", "Superman" and the main theme for "Jaws".

With the scores for "Star Wars" and "Superman", he evoked some of the greatest works of the Romantic composers. I have those albums on vinyl, and I listened to them over and over, until I can remember every passage.

I have always liked the opening score for 'Where Eagle Dare' and the 'The Battle of Britain'.

For over all tracks that I like there is 'The Last of the Mohicans' and 'Gladiator'.

For Non military/historical I love the soundtrack of 'Brother Where Art Thou?'

These are the ones that immediately come to mind, but if I thought about it too much I am sure I would think of many more great movie tracks.

Love movie soundtracks. "Black Hawk Down" is a good one. Loved the track to "L.A. Confidential" as it sets the whole mood, as a good track does. "The Sand Pebbles", "Red River", "The Thin Red Line", all great tracks that help make the movies as good as they are. -- Al
 
Last of the Mohicans is certainly a good one, as others have already said. Master and Commander was another good one in my opinion. I think in both of these films, the soundtrack did an excellent job of capturing the mood of the film, even as that mood would change with the plot.
