but indeed we must use the mesh gloves when cutting, if we cut ourselves without a mesh glove on you are fired on the spot!! All about insurance claims and BS.....I'll be waiting to see the Tassie!!!! We'll have a vote to see who has the better steak!!!^&grin

A good tradesmen cleans as he goes ^&grin i would get fired for leaving all that trim umtrimmed.
Never worn a glove mate only in the boning room doing tally but in a shop unnecessary never cut myself, I have on the bandsaw but never seriously with a knife.

Dude..that little rock pile took me all of 5-10 minutes to clean through...actually running short on grinds that day (pic is a few months old) and was hacking to get what I needed and burning the rest for fresh 80% trim. now if you want to go trim pan to trim pan bring it..31 years in this bizz I'm pretty confident in my trade.^&grin^&grin
Most all large Corporations now have tough regulations on cutting gloves, no biggie here as it may have saved me a bandaid here or there nothing major, did get bit by the bandsaw for 12-13 stitches many moons ago... but for 31 yrs. I like my odds after that long.

Sure, why not, a "meat off" in Chicago, the city of broad shoulders, those Chicagoans love a good piece of meat, nothing like a nice diet of steak and potatoes 7 days a week, that's what my uncle ate for dinner until he passed away at the ripe old age of 56, never saw that one coming.......................^&confuse
I eat red meat maybe once a month, it's chicken, fish and pasta on occasion for me, thanks for coming, don't forget to tip your waitress........................
