I know this is not the cooking forum but the HOURS comment leads me to suggest trying a cider brine prepared turkey; it is a relatively simple overnight soaking of the bird in a cider, salt and water solution that produces a very moist and tender turkey in much less cooking time (and no, it does not come out tasting salty). There are many recipes for it on the web or more specifically at epicurious.com. It sounded odd to us when it was recommended by a friend but it works great and greatly simplifies the holiday meal preparation logisitics.Crusader / Civil War Christmas for me !
